Pasticceria Filippi wants to preserve these memories of scents and tradition: it is the story of family, of experience and sacrifice, but also of the recognition of flavors linked to the land. The best stories are the ones that start well and have something to tell and share every day. PAsticceria Filippi is one of these stories, which began in 1972 in Zan\u00e8, Vicenza. In 1972, mother Maria and father Giuliano began the first chapter of this history by producing the first naturally leavened pastries, in the spirit of the authenticity of the ingredients and tradition. Today, her sons Andrea and Lorenzo continue the story with the same dedication and spirit. The adherence to high quality standards and the production rhythms, which are particularly strict at certain times of the year, have not allowed them to forget that the heart of the company, expanded and modernized over time by equipping it with new tools, is still a beating heart made up of people. Filippi was founded and is still a family-run craft business where everyone feels comfortable in a calm climate of respect for shared values \u200b\u200band a comprehensive quality project. They have embraced the philosophy that everything done with respect, care and passion takes time. Often the short times of efficiency do not correspond to the times of effectiveness.
Quality needs a \u201cslow\u201d time: the time to be perfectly prepared, tasted, shared and enjoyed down to the last crumb. In short: This is precisely the time where there is room for a smile!

The secret of Filippi products lies in the research, selection and care of natural and exquisite ingredients - in the spirit of authenticity.<\/p>\n\n

The selection is a continuous process in which the ingredients are constantly put through their paces in our laboratory.<\/p>\n\n

Like an orchestra creating a symphony, each instrument must work harmoniously with the whole. Therefore, we are not satisfied with each ingredient being good on its own, but rather it must harmonize well with all the others and adapt to the production techniques that reflect our company philosophy.
For this reason, we rethink, update, and optimize our ingredients from season to season, honoring the traditional techniques and flavors we wish to pass on\u2014without, however, sacrificing innovation. We keep our eyes open to the present and look curiously toward the future.
We want to know with certainty what the working conditions of people and the living conditions of animals are like in the environments from which the ingredients we select come from.
We say no to labor exploitation and violence against animals, yes to cooperation projects between small producers and farmers, yes to protecting biodiversity and choose local ingredients wherever possible.<\/p>\n
